Thawing Your Turkey: Get It Right, Every Time

The first step to a successful turkey dinner is safe thawing. Did you know that improperly thawing a turkey can lead to uneven cooking and even food safety issues? Here are two foolproof methods:

Refrigerator Thawing (Recommended)

  • Place your turkey (in its original packaging) on a tray in the refrigerator.
  • Allow 24 hours of thawing for every 4–5 pounds.
    Example: A 16-pound turkey will take about 4 days to thaw completely.

Cold Water Thawing (Faster Option)

  • Submerge the packaged turkey in cold water, changing the water every 30 minutes.
  • Allow 30 minutes per pound for thawing.
    Example: A 16-pound turkey will take about 8 hours with this method.

Pro Tip: Never thaw your turkey on the countertop—it’s a food safety hazard.


Cooking Your Turkey: Temperatures and Timelines

Once your turkey is thawed, the next step is cooking it to perfection. The USDA recommends roasting at a minimum oven temperature of 325°F, and cooking times vary based on weight and whether the bird is stuffed.

Unstuffed Turkey Cooking Times

  • 8–12 pounds: 2¾ to 3 hours
  • 12–14 pounds: 3 to 3¾ hours
  • 14–18 pounds: 3¾ to 4¼ hours
  • 18–20 pounds: 4¼ to 4½ hours
  • 20–24 pounds: 4½ to 5 hours

Stuffed Turkey Cooking Times

  • 8–12 pounds: 3 to 3½ hours
  • 12–14 pounds: 3½ to 4 hours
  • 14–18 pounds: 4 to 4¼ hours
  • 18–20 pounds: 4¼ to 4¾ hours
  • 20–24 pounds: 4¾ to 5¼ hours

Use a meat thermometer to check for an internal temperature of 165°F in the thickest part of the breast and the innermost part of the thigh. This ensures the turkey is fully cooked and safe to serve.
